For the Champagne Vinaigrette
- Place all ingredients except oil into a blender and mix for about 30 seconds.
- While the blender is still running, slowly add the oil in a
- steady stream to emulsify.
- Put dressing in sealable jar or bottle in the
- refrigerator until ready to use.
- Prepare salad, shake dressing well, pour, and lightly toss. Serve immediately.
